Böreks have a place close to my heart. I remember my grandmother making them whenever I came to visit her. They’re incredibly easy to make, and fun the experiment with!
This is the delicate and flaky crust of the pastry. You can make this yourself, or you can use an already made package. After the baking time, it should have swelled and become a golden brown colour.
In this recipe, I used a mixture of feta and ricotta cheese. This blend, when mixed with the egg, gives the filling a creamy and light texture. Mozzarella can also be used, but this gives the filling a stringy texture and cheesy taste.
1/3 cup of ricotta cheese
Sesame seeds for the topping
1. Preheat the oven to 350 degrees Fahrenheit.
2. In a medium bowl, crumple the feta with a fork.
3. In the same bowl, add the ricotta, egg, salt, and pepper. Mix well. Place aside.
4. On a well floured surface, roll out one sheet of the phyllo into a 12 x 12 square. Cut into 9 squares.
5. Taking 1 square, place a spoonful of the filling in the middle. Be mindful that there are 17 other squares the need to be filled. Wet the edges of the square with water and fold over into a rectangle. Taking a fork, press down along the edges to seal the holes. Repeat for each of the squares.
6. Place the böreks on a well oiled baking sheet.
7. In a small bowl, whisk together egg yolk and 2 tsp of water for the egg wash. Brush over each börek.
8. Sprinkle sesame seeds over each börek.
9. Bake for 25-30 minutes, or until golden brown and flaky.
