Hamentashen
Hamentashen is a dessert I eat each time I go to synagogue for Purim. It’s a tasty cookie with an interesting history.
Ingredients:
2 eggs
2/3 cup sugar
¼ cup canola oil
Pinch of orange zest
1 tsp. vanilla
2 ¼ cups flour
1 tsp. baking powder
¼ tsp salt
Filling of your choice
Instructions:
1.    Preheat the oven to 350 degrees F.
2.    In a large bowl, mix together the eggs, sugar, canola oil, orange zest, and vanilla.
3.    In a different bowl, sift the flour, baking powder, and salt.
4.    Combine the dry ingredients into the wet ingredients. Mix well until crumbles form.
5.    Knead dough until a dough forms. If too dry, add water. If too wet, add more flour.
6.    On a lightly floured surface, roll out the dough until 1 cm thick. Using a 3 inch diameter cookie cutter, cut circles into the dough.
7.    Place a bit of filling in the middle of a circle. Wet along the edges. Fold one edge over until it overlaps slightly with the filling. Grab another edge, and fold it over to make a triangle tip with the first edge. Fold over the last edge, finishing the triangle. Pinch the ends so that the form holds.
8.    Place cookies on a lightly oiled baking pan. Bake in the oven for around 23 minutes.
Tips:
-Â Â Â Â Â Â I used dried prunes and chocolate chips, but you can use cherries or apricots.

Menemen
Menemen is one of the easiest foods I’ve ever cooked, and certainly one of the tastiest. It’s a great dish to start the day with.
Ingredients
3 eggs
1 white onion, diced
1 red pepper, diced
¼ tsp. dried oregano
½ tsp. paprika
½ of a tomato, diced
Pinch of salt and pepper
Instructions:
1.    Heat the olive oil in a pan over medium heat.
2.    Add in the onion and pepper. Cook until onion is transparent and soft, around 8 minutes. Add the pepper, salt, and tomatoes. Cook for around 2 minutes, then set aside half of the mixture.
3.    Add the eggs to the veggies in the pan. Cook for around 2 minutes, or until the eggs start to set. Remove from heat, and add in the rest of the vegetables.
Tips:
-      I used red pepper, as that’s what I had on hand. For a varied taste, substitute the red pepper for Chinese green long pepper.

Chili
Chili is a dish that I grew up with, and there’s not a single thing I don’t like about it. I love to eat it with rice, cheese and sour cream.
Ingredients:
1 package of beef
1/2 cup chicken stalk
1 tbsp. orange juice
1 tsp. soy sauce
Pinch of salt and pepper
2 carrots, processed
1 white onion, processed
1 red pepper, processed
1 celery stalk, processed
1 can of tomato sauce
1 can of kidney beans
1 tsp. chili powder
Instructions:Â
1.    In a large pan over medium heat, cook the beef with the chicken stalk. Add the orange juice, the soy sauce, salt, and pepper.
2.    Add in the vegetables. Cook for 5 minutes, then add in the tomato sauce. Let simmer for 15 minutes.
3.    Drain the kidney beans. Add the beans and chili powder to the pot. Let cook for another 10 minutes.
4.    Serve while hot.

Macaroni and Cheese
Macaroni and cheese is a delicious treat, whether it’s made homemade or from a box. Even though it’s not the healthiest dish, it definitely is one of the most satisfying.
Ingredients:
1 package of macaroni
2 tbsp. butter
2 ½ tbsp. flour
2 cups cheddar, shredded
1 cup mozzarella, shredded
3 cups milk (1% or skim)
½ cup bread crumbsÂ
Instructions:
1.    Preheat oven to 350 degrees F.
2.    Boil the macaroni in a large pot.
3.    In a saucepan over medium heat, melt the butter. Slowly stir in the flour. Add the milk in a little at a time, until a thick liquid is formed. Mix in the cheddar and mozzarella until incorporated and smooth.
4.    Place the cooked macaroni in a large baking dish and stir in the sauce. Sprinkle the breadcrumbs over the pasta.
5.    Bake in the oven for around 25-30 minutes, or until the breadcrumbs begin to brown.
Notes:
-Â Â Â Â Â Â For a healthier recipe, use whole wheat pasta, low fat cheese, and low fat milk.
-Â Â Â Â Â Â You can use cheeses other than cheddar and mozzarella, such as parmesan.
-Â Â Â Â Â Â The whole 3 cups of milk might not be used before the sauce reaches the desired consistency. This is why you need to add it in slowly.

Challah
I eat Challah each time I go to synagogue. We have a tradition that all the kids touch a part of the bread with their pinky finger while everyone sings the prayer.
Ingredients:
2 ½ cups warm water
1 tbsp. active dry yeast
½ cup honey
4 tbsp. canola oil
3 eggs
1 tbsp. salt
8 cups flour
1 tbsp. sesame seeds
Instructions:Â
1.    In a small bowl, all the yeast to activate by sprinkling it over the warm water.
2.    In a large bowl, mix together the honey, oil, 2 eggs, and salt. Stir in the yeast and water. Add in the flour 1 cup at a time. Begin to knead the dough until smooth and not sticky.
3.    Cover the dough with a cloth, and allow to rise for an hour and a half.
4.    Press down on the dough to deflate. Cut the dough in half, and kneed until no longer tacky.
5.    Divide the dough into three equal parts, and roll into snakes. Pinch together the ends and begin to braid. Pinch to other end to secure to braid. Repeat for the other half.
6.    Place each loaf onto a greased baking sheet. Cover with a towel, and allow to rise for another hour.
7.    Preheat the oven to 375 degrees F.
8.    Beat the last egg, and brush over each loaf. Sprinkle on sesame seeds.
9.    Bake for around 30 minutes, or browning at the top.

Kofte
Kofte is a dish frequently made by my grandmother. It’s a delicious dish with an interesting taste courtesy of the cumin.
Ingredients:
1 slice of bread
1 package of lamb or beef
3 garlic cloves, crushed
1 white onion, finely chopped
1 tsp. ground cumin
1 tbsp. fresh mint, chopped
Pinch of salt
Pinch of pepper
¼ cup of flour
½ cup olive oil
Instructions:Â
1.    Soak the bread in water for 5 minutes.
2.    Mix together the meat, garlic, onion, cumin, mint, salt, pepper, and bread until well combined.
3.    Form into small sized balls, and then roll in the flour for coating.
4.    Heat the oil in a pan over medium heat. Drop the balls 3 at a time into the oil, and cook for around 10 minutes.
Tips:
-Â Â Â Â Â Â To make a healthier dish, bake the kofte on a baking sheet at 350 degrees F for 25 minutes.
-Â Â Â Â Â Â Eat alone, or inside pita bread.

Red Lentil Soup
Red lentil soup is a recipe frequently cooked my grandmother, and it always turns out great. It’s an easy and quick dish to make.Â
Ingredients:Â
2 carrots, diced
2 celery stalks, diced
1 white onion, diced
1 tbsp of olive oil
Pinch of salt
1 cup red lentils
2 cups water
2 cups chicken broth
1 bay leaf
Pinch of lemon juice
1.    In a large pot over medium heat, combine the olive oil, salt, celery, carrots, and onion. Cook until onions are softened and translucent.
2.    Add the lentils, water, broth, and bay leaf. Bring up to a boil, and then turn down the heat to allow the mixture to simmer for around 20 minutes.
3.    Take the pot off heat. Add in the lemon juice. Eat with rice or by itself.

Potato Kugel
Potato kugel is a dish that I’ve grown up with, and loved since the first time I tasted it.
Ingredients:
8 large potatoes, grated
1 large white onion, grated
5 eggs
½ cup vegetable oil
Pinch of salt
Pinch of pepper
Ingredients:
1.    Preheat the oven to 350 degrees F.
2.    In a large bowl, combine the eggs, oil, salt, and pepper.
3.    Add in the potatoes and the onion.
4.    Pour the mixture into a large 9 x 13 baking dish.
5.    Bake in oven for around 40 minutes, or until the potatoes start to brown.
