This tasty dish has the fragrant tastes of lemongrass and ginger, and the whole fish is soft and delicious. This savory sauce makes the fish moist and flavorful, making it a great meal for anyone who likes seafood.
Ingredients: 1 whole fish such as sea bass or snapper, cleaned and scaled. 3 stalks lemongrass, smashed and chopped. 1 thumb-sized ginger, sliced. 4 cloves garlic, minced. 2 tablespoons soy sauce. 2 tablespoons fish sauce. 1 tablespoon brown sugar. 1 cup chicken or vegetable broth. 2 tablespoons vegetable oil. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: Preheat the oven to 375F 190C. In a small bowl, mix together soy sauce, fish sauce, and brown sugar until the sugar is dissolved. Set aside. Season the fish inside and out with salt and pepper. Heat vegetable oil in a large ovenproof skillet over medium-high heat. Sear the fish on both sides until golden brown, about 3-4 minutes per side. Remove the fish from the skillet and set aside. In the same skillet, add lemongrass, ginger, and garlic. Cook for 2 minutes until fragrant. Pour in the soy sauce mixture and chicken broth. Bring to a simmer. Return the fish to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork. Garnish with fresh cilantro leaves before serving.
