Greek Yogurt Banana Bread-Moist & Delicious Recipe
These Peach Streusel Muffins are a delightful treat that combines the sweetness of peaches with a buttery streusel topping. Perfect for breakfast or as a snack.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, melted. 1/2 cup buttermilk. 1 large egg. 1 tsp vanilla extract. 1 1/2 cups fresh or canned peaches, diced. For Streusel Topping:. 1/4 cup all-purpose flour. 1/4 cup granulated sugar. 2 tbsp unsalted butter, cold.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with paper liners. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the melted butter, buttermilk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced peaches. In a small bowl, prepare the streusel topping by mixing the flour and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Spoon the muffin batter into the lined muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious Peach Streusel Muffins!
