This crustless quiche is full of beef, spinach, mushrooms, and cheddar cheese, making it a hearty and tasty meal any time of the day.
Ingredients: 1 lb ground beef. 1 cup sliced mushrooms. 2 cups fresh spinach. 1 onion, diced. 1 cup shredded cheddar cheese. 6 eggs. 1/2 cup milk. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add diced onion and sliced mushrooms to the skillet. Cook until softened. Stir in fresh spinach until wilted. Remove from heat. In a mixing bowl, beat eggs and milk together. Season with salt and pepper. Grease a pie dish and spread the beef and vegetable mixture evenly on the bottom. Pour the egg mixture over the beef and vegetables. Sprinkle shredded cheddar cheese on top. Bake in the preheated oven for 25-30 minutes or until the quiche is set and the top is golden brown. Let it cool slightly before slicing and serving.
