So with the colder weather and a crazy schedule I have been cooking one pot meals or using my crockpot as of late. I had some bone in pork country style ribs and some vegetables on hand so I made it work lol - Not only does it keep with my low carb goals but it's also nice, warm and comforting. So for the veggies I did a simple Caldo or soup base with 1/2 medium white onion diced, 1/2 green bell pepper chopped, 2-3 carrots peeled and chopped, 3 cloves garlic chopped, 2 celery stalks chopped & half a small cabbage with core cut out and rough chopped. I had about 4 good size bone country style ribs. 2 cups low sodium beef broth with 2 tablespoon tomato paste incorporated. You can microwave the broth and paste then stir. For seasoning I used 2 Tbsp Uncle Chris's Seasoning, 1 1/2 tsp onion & garlic powder each, 2 teaspoon beef bullion, 2 teaspoon paprika, 1 tablespoon cracked pepper and 1 teaspoon kosher or sea salt. Mix seasoning and sprinkle on meat on both sides. Add your veggies first in the crockpot except the cabbage. Next place the meat and pour in the broth & tomato paste. Lastly the cabbage on top as it steams and cooks the cabbage will start to wilt and cook down till you will be able to get it more down in the broth. Cook on low for 6 hours or med to high for 3 to 4 hours. Check for taste add a pinch or kosher or seas salt if needed. Serve with fresh avocado, onion, cilantro, lime or pico de gallo.
