A delicious and satisfying keto-friendly breakfast scramble inspired by the flavors of pizza! This Easy Pizza Scramble is packed with protein, veggies, and cheesy goodness, making it the perfect way to start your day.
Ingredients: 6 large eggs. 1/4 cup unsweetened almond milk. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon dried oregano. 1/4 teaspoon dried basil. Salt and pepper, to taste. 1/2 cup diced bell peppers. 1/4 cup diced onion. 1/4 cup sliced pepperoni, chopped. 1/2 cup shredded mozzarella cheese. 1 tablespoon olive oil. 2 tablespoons chopped fresh basil, for garnish optional. 1/4 cup marinara sauce, for serving optional.
Instructions: Add the eggs, almond milk, garlic powder, onion powder, dried oregano, dried basil, salt, and pepper to a bowl. Use a whisk to mix the ingredients well. Set a pan on medium heat and add the olive oil. Dice the onions and bell peppers and add them to the pan. Saut for three to four minutes, until the vegetables are soft. Add the chopped pepperoni to the pan and cook for one to two more minutes. Add the egg mix to the pan and leave it alone for one minute to cook. With a spatula, stir the mixture slowly so that the raw eggs can move to the bottom of the pan. Keep stirring and cooking the eggs until they are mostly set but still a little runny. Add some shredded mozzarella cheese on top of the scramble, and then put the lid on the pan. After another minute or two, the cheese should melt and the eggs should be fully set. Take it off the heat and, if you want, add some chopped fresh basil on top. If you want, you can serve it hot with marinara sauce on the side.
