Dinner tonight was 👌🏼👌🏼👌🏼. Sriracha Honey Glazed Chicken with Mango Avocado Salsa. Recipe is from #blackberrybabe via @Pinterest. This is actually a 21 Day Fix approved meal, even though that isn't why I made it. I did a few tweaks to the recipe (as I always seem to do. • Instead of grilling the chicken (which probably would've been really good but ain't nobody got time for that!), I baked in the oven. I seasoned the chicken with pepper, garlic powder, and low sodium Tajin. When the chicken was about done i turned the broiler on and basted them with the sauce. First baste for 3 mins, second baste for another 3 mins. • The Salsa I added one jalapeño, and cherry tomatoes for a little more of bite. Recipe link is in my bio!! Eating food that doesn't look good in pictures is the theme of the week. Tuna sandwich for lunch🤗 I used the Tuna Creations pouches in Lemon Pepper with this. Then mixed Dill Greek Yogurt, Dijon Mustard, and Sriracha all up in it. Layered with onions, tomatoes, and baby kale on top of Dave's Killer Bread. Tonight's dinner is one of those doesn't-photograph-well-but-taste-amazing dinners. The recipe is from @realsimplegood via @pinterest called Paleo Lasagna. It's not your typical "low carb" lasagna using zucchini slices in place of pasta. It's spaghetti squash! There's also no cheese which worried me about it holding together. I tweaked the recipe a little bit. • •I added zoodles (zucchini noodles along with the squash). I spiralized them then soaked up the moisture in a towel. If you don't do this you'll have a very soupy dish. •I used Italian seasoned Ground Turkey and added in all spice, cayenne, garlic pepper, and oregano to give a more sausage flavor. •I topped with turkey pepperoni instead of traditional to make lower in fat. Surprisingly filling for something so low in carbs!! Gluten, Grain, and Dairy free dish. (I will post link in bio.
