SWEET POTATO & KIMCHI🌟 With some recipes, after one bite out just know it's a winner! Today, I'm sharing one of these - an amazingly simple recipe based on one of Cookyourlife's key mantras: simple preparation, simple food! I like to keep things nice and simple and to eat foods that make me feel good inside and out. Some of the ingredients are provided by my locals friends, like the kimchi now being sold @theeatingroom or selected vegetables from @hugosgreengrocer another @foxandwest172 or @chi.foods. Other suppliers include @wellthos who I’m working with to create new free recipes for their website. As a Nutritionist, food stylist, recipe designer, freelance writer with my business @cookyourlife and now, plastic free lifestyle guide (phew!), I know that it's possible to eat healthy, organic food on a budget, avoiding the big supermarkets. Ingredients: 🌱A sweet potato @chi.foods 🌱A portobello mushroom @chi.foods 🌱1/4 bunch of asparagus @foxandwest172 - 🌱3 tomatoes @hugosgreengrocer 🌱1/2 handful of kale @hugosgreengrocer 🌱1 TBsp sesame seeds @zerogreenbristol 🌱1/2 TBSp pumpkin seeds @zerogreenbristol Instructions: 1. Slice the sweet potato roast in the oven until soft and golden brown. 2. Slice the portobello mushroom and add in a bowl with a spoon of miso and water. Soak for a few minutes, or better still, prepare the night before. 3. In a frying pan, sauté the asparagus with little coconut oil and sesame seed. 4. Now add the kale with some spice. I used @nudespice from @wellthos box, which gives a delicious sweet and smoky flavour. 5. Before serving, slice the tomatoes and heat the mushroom in a pan. 6. To serve: Plate up the sweet potato and top with the ingredients previously cooked. A poached egg or your favourite protein source is always a great addition here. Season as you like!
