This is a hearty and tasty brunch casserole with chewy cheddar cheese, crispy bacon, and soft hash brown potatoes. Great for a relaxing weekend brunch or a special event.
Ingredients: 6 slices bacon, chopped. 2 cups frozen hash brown potatoes. 1 cup shredded cheddar cheese. 8 large eggs. 1/2 cup milk. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. 2 green onions, chopped.
Instructions: Preheat your oven to 350F 175C. In a skillet, cook the chopped bacon until crispy. Remove and drain on paper towels. In the same skillet, add the frozen hash brown potatoes and cook until they are golden brown and cooked through. In a large bowl, whisk together the eggs, milk, salt, black pepper, and paprika. Stir in the cooked bacon, hash brown potatoes, shredded cheddar cheese, and chopped green onions. Pour the egg mixture into a greased 9x13-inch baking dish. Bake in the preheated oven for 25-30 minutes or until the casserole is set and the top is golden brown. Remove from the oven and let it cool slightly before serving. Garnish with extra chopped green onions if desired. Slice and enjoy your delicious bacon, potato, egg, and cheese brunch casserole!

This Eggs Benedict Casserole is a simpler take on a classic brunch dish. It has toasted English muffins, Canadian bacon, and a creamy egg mixture. It's great for feeding a lot of people. For a delicious brunch, put Hollandaise sauce on top of it.
Ingredients: 6 large eggs. 6 English muffins, split and toasted. 1/2 pound Canadian bacon, diced. 1/4 cup unsalted butter, melted. 1 1/2 cups whole milk. 1 teaspoon Dijon mustard. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon paprika. 2 tablespoons fresh chives, chopped. Hollandaise sauce for serving.
Instructions: Turn on your oven and heat it up to 375F 190C. Place the toasted English muffin halves, cut side up, in a 9x13-inch baking dish that has been greased. On top of the English muffins, put the diced Canadian bacon. Mix the eggs, melted butter, whole milk, Dijon mustard, salt, black pepper, and paprika in a bowl using a whisk until everything is well mixed. Spread the egg mix out evenly over the bacon and English muffins in the baking dish. Aluminum foil should be placed over the baking dish. The casserole should be baked for 25 to 30 minutes, or until it is set and slightly puffed. Take off the foil and bake for another 5 to 10 minutes, or until the top is just beginning to turn golden. Take the casserole out of the oven when it's done and sprinkle fresh chives on top. Put slices of the Eggs Benedict Casserole on plates and drizzle warm Hollandaise sauce over each one.
