A tasty vegan take on the famous Buffalo chicken sandwich. Gluten-free chicken patties dipped in a hot Buffalo sauce are put on a bun with tangy buffalo mayo, fresh lettuce, tomatoes, and red onion slices.
Ingredients: 4 vegan chicken patties. 4 vegan burger buns. 1/2 cup hot sauce. 1/4 cup vegan mayonnaise. 1 tablespoon vegan butter. 1 tablespoon maple syrup. 1 teaspoon garlic powder. 1 teaspoon onion powder. 1/2 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and pepper, to taste. Lettuce leaves, for serving. Sliced tomatoes, for serving. Sliced red onion, for serving.
Instructions: Preheat oven to 400F 200C. Place vegan chicken patties on a baking sheet and bake for 15-20 minutes, or until crispy. In a small saucepan, melt vegan butter over medium heat. Add hot sauce, maple syrup, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Stir well to combine. Simmer the sauce for 5 minutes, stirring occasionally. Remove the sauce from heat and let it cool slightly. In a small bowl, mix together vegan mayonnaise and 2 tablespoons of the prepared buffalo sauce. To assemble the sandwiches, spread the buffalo mayo on the bottom half of each bun. Top with a lettuce leaf, a vegan chicken patty, sliced tomatoes, and red onion slices. Drizzle additional buffalo sauce over the chicken patty. Cover with the top half of the bun. Serve immediately and enjoy!
