Buri Daikon

Buri daikon, simmered yellowtail and daikon raddish, is a traditional recipe served during the early winter when both ingredients are on its peak (Shun, 旬). 

Personally, this buri daikon recipe was quite a challenge: I got it right only after my third attempt, all the previous tests ended up with the fish too tough and/or tasteless.

For the first attempt, I simmered everything together for a long time (around one hour) in order to make the ingredients absorb the seasonings. However, while the daikon was quite decent, the buri was totally dried up inside, as if all juices and oils were squeezed out from the fish. I tried the opposite procedure during the second attempt: a very short cooking time for the fish. I cooked the daikon in the simmering liquid until it became tender then added the buri and cooked it for less than 5 minutes... I was wrong, the result was once again tasteless and dried up inside. 

I did some research using some recipe books and videos on the internet before trying to prepare the dish for the third time. I noticed that most of the recipes cooked the daikon beforehand in hot water until tender (20 minutes), then added it later to the simmering liquid including the fish. 

For the third attempt, the seasonings were quite similar to what I used before and the simmering liquid was reduced to a thicker consistency after cooking everything together for 15 minutes...

...That worked perfectly! The daikon became tender, full of flavor and the buri was juicy, soft and succulent. The fish was nowhere dried up, all the fat was still there. After some time thinking, I figured out that the main issue was the daikon. When cooked together with the fish, the daikon released some substance that was squeezing the fish juices out. Now that the mystery is solved, if you follow the next steps you won't need to face the same problem as I did before:

Recipe

400g of buri, cut in large pieces

400g of daikon, cut in large slices

20g of ginger, cut in slices

1L of water

4tbsp of shoyu

4tbsp of sake

4tbsp of sugar

2tbsp of mirin. 

2tbsp of tamari

Steps

Set a deep pot with water on high heat.

Cook the daikon for around 20 minutes until tender. Discard the water and reserve.

Set another pot with boiling water.

Dip the buri pieces in the boiling water fast for 30 seconds and put it in cold water.

On a pot, add the daikon, the buri, 1L of water, ginger, shoyu, sake and sugar.

Cook everything for around 15 minutes on medium heat.

Set the heat to high, add tamari and mirin, then reduce the liquid until it becomes thicker.

Serve

Tips

Cooking the daikon separately ensures that the fish will not get dried up.

By piercing the daikon with a single chopstick, you can easily know if the daikon is done if the chopstick goes through it.

If you do not have tamari, you can replace it by adding a little bit of shoyu and sugar instead.

The sauce should be quite sweet, not salty.

The sauce should be slightly thick, so it can stick on the surface of the daikon.
