Busy in the kitchen

Today it is grey and windy outside, so Nora and I are staying inside. We are sitting in the kitchen and Nora is eating some bread and cucumber sticks. I am preparing some food for her, I am making carrot and cauliflower mash so I have some for the freezer as well.

I am also preparing dinner for tonight, we are having a salad so thats why I can prepare everything now. I am copying a salad that I once had at the California Pizza Kitchen in Nashville. It is soooo good!

It is an arugula, quinoa, asparagus, red onion and feta cheese salad but as always I am free styling and making the salad my own, haha. My salad will be slightly different. It will contain the arugula, but the asparagus will be replaced by green beans, and the quinoa will be replaced by barley. The red onions and the feta cheese will be there and then I am going to add some chicken.
