Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. Pinch of salt. 6 large egg yolks. 1/4 cup bourbon. 1 teaspoon vanilla extract. 1 cup butterscotch chips.
Instructions: In a saucepan, heat the heavy cream, whole milk, sugar, and salt over medium heat until it begins to steam, stirring occasionally. In a separate bowl, whisk the egg yolks until smooth. Slowly pour the heated cream mixture into the egg yolks, whisking constantly to temper the eggs. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Remove from heat and stir in the bourbon and vanilla extract. Allow the mixture to cool completely, then churn in an ice cream maker according to the manufacturer's instructions. During the last few minutes of churning, add the butterscotch chips to incorporate them into the ice cream. Transfer the churned ice cream to a freezer-safe container, layering it with additional butterscotch chips if desired. Freeze until firm, typically for about 4 hours or overnight.
