Buttery French Onion Rice
Saudi-Style White Rice Makes 2 cups Prep time: 15 minutes Cooking time: 40 Minutes - 1 cup (200 g) uncooked Basmati or other white long-grain rice, soaked for 5 minutes, thoroughly rinsed and drained - 1 teaspoon salt - Boiling hot water, about 4 to 6 cups - 4 tablespoons butter, melted 1. Place the drained rice and salt in a medium saucepan with a lid. Pour in the boiling water to about 2 inches over the rice. Bring to a boil, cover, and cook over low heat for 8 minutes. Drain in a sieve and rinse with cold water for 1 minute. 2. In the same saucepan pour 2 tablespoons of the butter. Add the drained rice and pour the remaining 2 tablespoons of the butter evenly over the top. Cover and cook over very low heat for 30 minutes, or until the rice is fully cooked - when the kernels can be easily pressed between fingers - stirring a number of times.
