Shrimp and Black Beans Rice Bowl with Lime Crema
Alternatively referred to as a "deconstructed shrimp burrito bowl." Sometimes I like it best wrapped in a tortilla; other times, I love it best served with lettuce for a bright splash of color and crunch. You constantly have a yearning for something tasty, light, simple, and satisfying during the summer. You can precook the rice and black beans if you find that life becomes too busy, or you just don't want too much heat in your house. Purchasing your lime crema sauce can also make life easier.

Spanish Rice
1 Cup of white rice (not quick cooking or instant)
1 Small onion, chopped
2 Cloves garlic, chopped
1 14ounce can of diced tomatoes (mom prefers to use petite diced)
1 14ounce can/box of chicken broth (or just use the tomato can to measure water and add chicken bullion)
1 Tablespoon of oil
1 8ounce can tomato sauce
Optional: small can of diced chilis
In a frying pan, with a lid, pour in the oil and the rice and cook until the rice is lightly brown. Add in the onion and cook until the onion is starting to soften, add in garlic and cook for a few minutes more. Add the diced tomatoes, tomato sauce, and broth/water and chicken bullion (whichever you have). Pour water about halfway up the tomato sauce can and swirl to get all the sauce, add to the rice. Bring the rice to a boil, cover the pan, reduce heat to simmer and let cook 25-30 minutes or until liquid is absorbed.
