Ingredients: 4 large eggs. 2 cups unsweetened almond milk. 1/2 cup erythritol or preferred keto-friendly sweetener. 2 tablespoons butter. 1 teaspoon vanilla extract. 1/4 teaspoon xanthan gum optional, for thickening.
Instructions: Start by heating the oven up to 325F 160C. Put the almond milk and butter in a saucepan and heat them over medium-low heat until they begin to foam. Take it off the heat. Whisk the eggs, erythritol, and vanilla extract together in a bowl until everything is well mixed. Pour the hot almond milk mixture into the egg mixture slowly while whisking all the time to keep the eggs from scrambling. Sprinkle xanthan gum over the mixture and mix it in with a whisk until it is completely mixed in. Make sure there are no lumps in the custard by pouring it through a fine mesh sieve into a pouring jug. Fill ramekins or bowls that can go in the oven with equal amounts of the custard mixture. Putting the ramekins in a baking dish and adding enough hot water to cover half of the sides of the ramekins is all you need to do. In an oven that has already been heated, bake the custard for 30 to 35 minutes, or until it is set but still has a little give in the middle. Take the ramekins out of the water bath slowly and let them cool to room temperature. Put the custards in the fridge for at least two hours, or until they are cold and set. Enjoy!
