Pecan Delight Bars Indulge in these rich and gooey pecan bars that combine the sweetness of corn syrup and brown sugar with the crunch of finely chopped pecans, all on a soft cake mix crust. Ingredients: 2 (9-oz) boxes yellow cake mix (Jiffy brand) ½ cup melted butter 4 large eggs divided ½ cup firmly packed brown sugar 1½ cups light corn syrup 1 tsp vanilla extract ½ tsp ground cinnamon 1½ cups finely chopped pecans Instructions: Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray and line with parchment paper. Reserve ? cup of the cake mix for the filling. Mix the remaining cake mix, melted butter, and 1 egg. Spread this mixture in the prepared pan and bake for 13-15 minutes, or until lightly brown. In a separate bowl, combine the reserved cake mix, brown sugar, corn syrup, vanilla extract, cinnamon, and the remaining 3 eggs. Beat the mixture for 2 minutes and then spread it over the baked crust. Sprinkle the finely chopped pecans on top of the filling. Bake for an additional 30 minutes.
