Hand-made wine by Marilena Barbera, Menfi, Sicily! • • The “Ammano” Bianco is made with 100% Zibibbo from an organically farmed vineyard within site of the Mediterranean Sea! It’s hand-harvested, de-stemmed and squeezed by hand, spontaneously-fermented, allowed to be in contact with the skins for about a week before gentle pressing into neutral oak where it spontaneously goes through malo. Today is all about hand-made wines! This is the Cantine Barbera “Ammàno” Bianco made by Marilena Barbera. It is a 100% Zibibbo grown organically in Menfi, Sicily, picked by hand, de-stemmed and squeezed by hand into open top steel tank. The grapes spontaneously ferment and stay in contact with the skins for about week with occasional punch-downs and stirring of the lees. The grapes are gently pressed into neutral oak and allowed to spontaneously go through malo. The wine is not fined nor filtered and is bottled through gravity and corked manually. Even the labels are hand-written!
