@huckleberrynz Kojac rice and cauliflower fritter👌🤤 ✅ gluten-free ✅ low-carb ✅ low-calorie ✅ delicious Trying a few new things to keep the diet interesting and thought I'd try a fritter that fits my diet. Recipe if you're interested: 150g Cauliflower rice 1/2 packet Kojac rice @huckleberrynz Handful of Shredded carrot 1 egg 1/2 tsp Guar gum Directions: Fry the Kojac rice and cauliflower to get rid of the moisture. Mix the rice and cauliflower into a large bowl and mix in your egg, carrot, and guar gum. Roll into tight balls and then pat out flat. Fry on a non stick pan till lightly browned. Flip and repeat. I wilted some spinach on top of the fritter then added my caramelized onion, low-sugar sauce, chicken breast, and avocado.
