A delicious vegan twist on traditional Italian rice using cauliflower as a base. This recipe is packed with flavor from herbs and veggies, making it a nutritious and satisfying meal.
Ingredients: 1 medium cauliflower, grated. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 cup cherry tomatoes, halved. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, saut until softened. Add diced bell pepper and cook for another 2 minutes. Stir in grated cauliflower, cherry tomatoes, dried oregano, dried basil, salt, and pepper. Cook, stirring occasionally, until cauliflower is tender, about 5-7 minutes. Adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves.
