By waffling cauliflower with thyme and Parmesan, you can make a tasty and unique dish. Add a creamy lemon sauce on top to make it taste even better.
Ingredients: 1 large head of cauliflower, cut into florets. 2 tablespoons olive oil. 1 teaspoon dried thyme. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. 1/2 cup heavy cream. 2 tablespoons unsalted butter. 2 tablespoons lemon juice. 1 teaspoon lemon zest. Fresh thyme leaves for garnish.
Instructions: Warm up your waffle iron and use non-stick cooking spray to lightly coat it. Sprinkle the cauliflower florets with salt, pepper, olive oil, and dried thyme. Toss the florets in a large bowl with the cheese until they are well covered. Close the lid on the waffle iron and put the cauliflower mixture inside. The waffle should be golden brown and crispy after 5 to 7 minutes of cooking. The cauliflower should be soft. Make the creamy lemon sauce while the cauliflower waffles are cooking. Put the unsalted butter and heavy cream in a small saucepan. Heat them over low heat until the butter melts. Add the lemon zest and juice and mix well. Add pepper and salt to taste. Add fresh thyme leaves on top of the hot waffled cauliflower and drizzle with the creamy lemon sauce. Have fun!

Ingredients: 4 cups riced cauliflower. 2 large eggs. 1/2 cup shredded mozzarella cheese. 2 tablespoons almond flour. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Cooking spray or oil for greasing waffle iron.
Instructions: Preheat your waffle iron according to manufacturer's instructions. In a large bowl, mix together riced cauliflower, eggs, mozzarella cheese, almond flour, garlic powder, onion powder, salt, and pepper until well combined. Spray or brush the waffle iron with cooking spray or oil. Scoop cauliflower mixture onto the preheated waffle iron, spreading it evenly. Close the waffle iron and cook until the waffles are golden brown and crisp, about 5-7 minutes. Carefully remove the waffles from the waffle iron and repeat with remaining cauliflower mixture. Serve hot with your favorite keto-friendly toppings or sauces.
