This Beef Fajita Bowl with Cauliflower Rice is a delicious and healthy meal prep option. Tender beef slices are cooked with colorful bell peppers and onions, seasoned with aromatic spices, and served over cauliflower rice for a low-carb twist. It's easy to make and perfect for a quick and nutritious lunch or dinner throughout the week.
Ingredients: 1 lb beef sirloin, thinly sliced. 2 bell peppers, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 tbsp olive oil. 1 tsp chili powder. 1 tsp ground cumin. 1 tsp paprika. 1/2 tsp garlic powder. Salt and pepper to taste. 4 cups cauliflower rice. 1/4 cup chopped cilantro. Juice of 1 lime. Optional toppings: avocado slices, sour cream, salsa.
Instructions: In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add beef slices and cook until browned, about 2-3 minutes per side. Remove from skillet and set aside. In the same skillet, add remaining olive oil. Add bell peppers, onion, and minced garlic. Cook until vegetables are tender, about 5-6 minutes. Return beef to the skillet. Sprinkle chili powder, cumin, paprika, garlic powder, salt, and pepper over the beef and vegetables. Stir to combine. In a separate skillet, heat cauliflower rice over medium heat until heated through, about 5 minutes. Remove cauliflower rice from heat and stir in chopped cilantro and lime juice. Divide cauliflower rice among meal prep containers. Top with beef fajita mixture. Add optional toppings if desired. Store in the refrigerator for up to 4 days. Reheat before serving.
