okay, soup 3! This one was, uh, slightly improvised. My oven broke 😭 (it's fixed now) so I couldn't cook the meal I had planned to. So I got out the recipe for celery soup I'd been meaning to get to and did what I could.
Recipe was from The Complete Farmhouse Kitchen Cookbook (Farmhouse Kitchen having been a cookery show that ran on Yorkshire Television 1971-1990). I didn't have the full amount of milk & cream it called for, so I padded it a little with yoghurt I had leftover from doing the spicy potato soup. I also didn't have a bouquet garni, or the means to make one in the time available, so just used dried herbs of the sugested type and hoped for the best.
Oh, also I was hungry and sad about the oven and I accidentally skipped the step about adding flour. So all things considered I should be grateful it was edible!
Notes: It turned out alright! Nothing mind-blowing, but it was perfectly fine, considering the mis-steps.
Definitely more of a starter/appetiser soup than a full meal, given that it is essentially just boiled celery. I got hungry again pretty fast. However! The next day my oven-failure-induced lack of meal prep caused me to risk mixing the leftovers of this with some leftover rice and heating that through to approximate a meal, and that was amazing. Turned into a creamy celery risotto-style thing and the herbs really came through.
I was also interested to get a recipe that explicitly uses the celery leaves, as I almost never eat those.
