Also, I'd like to know more about Gaulish giants in general.

Is there an origin story for giants in Celtic myth that we know of?

Sadly, none, along with a defined Creation myth. If there are any, then its a shame it wasn't written down.

The Irish Lebor Gabala Erenn/Book of Invasions describes the successive settling of Ireland by six different races, including the Tuatha de Danann, but the Giant stand-ins, the Fomorians, randomly appear and are never given an explanation for it.

There is one story I know of that explains the origins of the British giants, Des Grantz Geanz, but it's an Anglo-Norman story inserted into a adaptation of Geoffrey of Monmouth's pseudohistory. And Geoffrey himself isn't exactly an authority on indigenous British myths either.
