there's something quietly satisfying about a snack that doesn't ask anything of you.
the chai is steeping. the afternoon is slow. and there's a bowl of masala gathiya on the table — oven-baked, which sounds almost too responsible for something this good — and you're just… sitting with it.
it tastes like every childhood tea-time snack memory. the warmth of ajwain. the slow heat of red chilli. the earthy besan crunch. it's all there. the only thing missing is the guilt that usually tags along.
someone somewhere figured out how to bake the joy in and leave the regret out. i'm not mad about it.
