Ingredients: 1/2 cup cashews. 1 cup unsweetened almond milk. 1 ripe banana. 1 tsp chai spice blend cinnamon, cardamom, ginger, cloves. 1 tbsp honey or maple syrup optional, for sweetness. 1/2 tsp vanilla extract. 1/2 cup ice cubes. Chai tea bag optional, for extra chai flavor.
Instructions: If using a chai tea bag, steep it in 1/2 cup of boiling water for 5-7 minutes. Remove the tea bag and let it cool. In a blender, combine the cashews, almond milk, banana, chai spice blend, honey or maple syrup if using, and vanilla extract. Add the cooled chai tea if using and ice cubes to the blender. Blend all the ingredients until smooth and creamy. If needed, add more almond milk to achieve your desired consistency. Chai Pumpkin Whoopie Pies are a delicious treat that are both vegan and gluten-free. They taste warm and cozy thanks to the chai spice and pumpkin. A creamy chai spice filling is squished between two soft cookies that look like cakes. The combination of sweetness and spice is just right.
Ingredients: 1 cup canned pumpkin puree. 1/2 cup coconut sugar. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 2 cups oat flour. 2 tsp baking powder. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground cloves. 1/4 tsp ground cardamom. 1/4 tsp salt. 1/2 cup almond milk. 1 tbsp apple cider vinegar. Chai spice filling:. 1 cup raw cashews, soaked in water for 4 hours. 1/4 cup maple syrup. 1/4 cup almond milk. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground cloves. 1/4 tsp ground cardamom. 1/4 tsp vanilla extract. Pinch of salt.
Instructions: Warm the oven up to 175F 350C. Put parchment paper on the bottom of a baking sheet. Put pumpkin puree, coconut sugar, maple syrup, melted coconut oil, and vanilla extract in a large bowl. Mix the baking powder, cinnamon, ginger, cloves, cardamom, and salt in a different bowl using a whisk. Slowly add the dry ingredients to the wet ones while stirring them together. Apple cider vinegar and almond milk should be mixed together in a small bowl. Take it out of the heat and let it sit for a few minutes. Then add it to the batter. Drop tablespoon-sized balls of batter, about 2 inches apart, onto the baking sheet that has been prepared. Put them in the oven for 12 to 15 minutes, or until the tops feel firm. Take it out of the oven and let it cool for 5 minutes on the baking sheet. Then, move it to a wire rack to finish cooling. Soak the cashews for a while, then drain and rinse them. Add the almond milk, cinnamon, ginger, cloves, cardamom, vanilla extract, and a pinch of salt to a food processor or blender. Blend or process the ingredients until smooth. Mix until it's creamy and smooth. After the whoopie pie cookies have cooled all the way down, spread a lot of the chai spice filling on the flat side of half of them. Add the last few cookies on top to make sandwiches. You can serve it right away or put it in the fridge in an airtight container for up to three days.

Ingredients: 4 cups apples, peeled, cored, and chopped. 2 cups granulated sugar. 1/4 cup lemon juice. 1 chai tea bag. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground cardamom. 1/4 teaspoon ground ginger.
Instructions: Place the chopped apples, sugar, and lemon juice in a large saucepan. Add the chai tea bag and spices to the saucepan. Cook the mixture over medium-high heat, stirring frequently, until the apples soften and the mixture thickens about 20-25 minutes. Remove the chai tea bag and discard it. Use an immersion blender to blend the jam until smooth, or leave it chunky if you prefer. Continue to cook for an additional 5-10 minutes until the jam reaches your desired consistency. Pour the hot jam into sterilized jars, leaving a 1/4-inch headspace. Seal the jars with lids and process in a boiling water bath for 10 minutes to ensure they are properly sealed.
