Chili Lime Marinated Chicken and Instant Pot Charro Beans
Chili Lime Marinade
Ingredients
1 tsp each Better Than Bouillon Adobo and Chipotle
Juice of one Lime
2-3 tbsp The Gourmet Collection Chili & Lime Seasoning
1/4 cup hot water
1/4 cup Olive or Avocado Oil
1/4 cup finely chopped Cilantro (optional)
Instructions
1. Dissolve the Better Than Bouillon Adobo and Chipotle in the hot water
2. In a gallon sized bag, add the rest of the ingredients. When the Better Than Bouillon has cooled, add it to the bag.
3. Add your protein of choice and allow to marinade for at least a few hours.. preferred overnight.
4. Grill! 😁
Notes:
I used The Gourmet Collection Chili & Lime Seasoning because that's what I had in the cabinet, but I know others make a Chili Lime Seasoning that can be substituted!

Poverty Hill Charro Beans For those who have asked and so patiently waited. Here is my recipe for charro beans. These spices are per quart. Just measure them into the bottom of the jar and then put the beans on top. These are shortened instructions for experienced canners. If you're not sure what you're doing get yourself a book that teaches you all the important safety considerations, or go on YouTube and watch a whole lot of canning videos. You can learn a lot there too, but don't make your family sick because you didn't learn how to do it the right way. Moving on. For each QUART jar you will need: 1/2 teaspoon canning salt 1 teaspoon garlic powder 1/2 teaspoon chili powder 1/2 teaspoon minced onion 1/2 teaspoon minced garlic 1/2 teaspoon cumin 1 teaspoon onion powder *1 tbsp canned green chiles *optional depending upon your tolerance for spice *1/4 teaspoon ground cayenne pepper if you like it spicy like I do. leave this out if you have family members who do not care for spicy food. 2 1/2 cups soaked (overnight) pinto beans that have been par-cooked for 30 minutes Top off with water leaving 1 inch of headspace. Wipe, lid and ring your jars. Then process in a pressure canner on high for 90 minutes. The pressure that you process at depends upon your elevation and it is different for everyone. You need to look up your elevation and decide for yourself what you need. You can and should play around with the spices adding more or less or omitting things if you don't like them as you see fit, that's just you cooking. This is just a good place to start. You should absolutely make these your own. You also don't have to can these beans, you can throw them in a crock pot and cook them all day with the same amount of spices and they will be fabulous.
