Vocês conhecem o “Vin Jaune”? . Vin Jaune, em francês, significa “Vinho Amarelo” e é um vinho super especial produzido na região do Jura, a menor região vinícola da França. . O Vin Jaune encontra sua melhor expressão na pequena AOC Château Chalon e é elaborado 100% com a uva emblemática do Jura, a Savagnin, colhidas super-maduras, e apenas em anos com condições climáticas favoráveis. . O Vin Jaune difere muito dos vinhos brancos “normais” pois é produzido através de um método especial: depois de fermentado lentamente, o mosto da uva Savagnin é colocado em barricas velhas de 228L e maturado por 6 anos e 3 meses!!! . Durante esses 75 meses de envelhecimento, parte do vinho evapora (a “parte do anjo”) criando um bolsão de ar dentro do barril. Os barris nunca são completados (processo chamado “ouillage”) e a presença do ar provoca o desenvolvimento da “voile”, um véu de leveduras similar a “flor” dos Jérez, que impede a oxidação total do vinho. . Ao final, apenas 62% do volume inicial continua no barril e o vinho é, então, engarrafado nas tradicionais garrafas de 62cl (620mL) chamadas “Clavelin”. . Este Vin Jaune, produzido pelo Domaine Baud, aos 14 anos de idade, tem coloração amarelo-ouro na taça e exala aromas de nozes e castanhas, mel, resina e oxidação. Na boca é seco e mostra acidez média-alta, corpo médio, untuosidade leve e mineralidade (salinidade). O final é longo e com notas de nozes e cêra. . Muito diferente, foi uma experiência super interessante! Não é meu estilo de vinho e, claramente, não é pra qualquer ocasião. Vai bem com pratos à base de cogumelos, curry e queijo Comté (o queijo do Jura). .
