This dish is satisfying and comforting, with a delightful combination of fluffy white rice, tender broccoli, and creamy cheddar cheese. Ideal as a stand-alone entre or a side dish.
Ingredients: 1 cup white rice. 2 cups chicken broth. 1 cup chopped broccoli florets. 1/2 cup shredded cheddar cheese. 1/4 cup heavy cream. Salt and pepper to taste.
Instructions: The chicken broth should be brought to a boil in a medium saucepan. When the white rice is cooked and the liquid has been absorbed, add it to the boiling broth, lower the heat to low, cover, and simmer for 15 to 20 minutes. Add the chopped broccoli florets and cook, stirring, until the broccoli is tender, about 5 more minutes. Take off the heat and whisk in the heavy cream and cheddar cheese shreds until they melt and become creamy. To taste, add salt and pepper for seasoning. Enjoy while hot!
