Ingredients: 8 oz whole wheat pasta. 1 cup pumpkin puree. 1/2 cup low-fat Greek yogurt. 1/4 cup grated Parmesan cheese. 2 cloves garlic, minced. 1/2 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil. 2 cups baby spinach leaves.
Instructions: Cook pasta according to package instructions, drain, and set aside. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Stir in pumpkin puree, Greek yogurt, Parmesan cheese, dried thyme, salt, and pepper. Cook for 2-3 minutes until heated through and creamy. Add cooked pasta and baby spinach leaves to the skillet. Toss until spinach wilts and pasta is coated in the creamy pumpkin sauce, about 2 minutes. Serve hot, optionally garnished with additional Parmesan cheese and a sprinkle of thyme.
