Ingredients: 2 cups all-purpose flour. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/4 teaspoon garlic powder. 1/2 cup unsalted butter, cold and cubed. 1 cup shredded cheddar cheese. 3/4 cup buttermilk. 1 lb cooked lobster meat, chopped. 1/4 cup mayonnaise. 1 tablespoon lemon juice. 1 tablespoon chopped fresh chives. Salt and pepper to taste. Butter for spreading.
Instructions: Preheat the oven to 425F 220C. In a large bowl, combine flour, baking powder, salt, and garlic powder. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the shredded cheddar cheese. Gradually add buttermilk and mix until the dough comes together. Turn the dough out onto a lightly floured surface and knead gently a few times. Pat the dough into a 1-inch thick round and cut out biscuits using a round cutter. Place biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown. In a separate bowl, mix together chopped lobster meat, mayonnaise, lemon juice, chives, salt, and pepper. Slice the cheddar cheese biscuits in half horizontally and spread butter on each cut side. Divide the lobster mixture among the biscuit bottoms and top with the remaining biscuit halves. Serve immediately and enjoy!
