I was thrown off by the tomato soup when I was making this because I've never had shepherd's pie with a tomato element. But apparently it's not uncommon, so I guess I just haven't had a lot of shepherd's pie?
ANYWAY, this recipe was very easy and very tasty. Will definitely make it again.
TIP #1: I used 3 of those little mashed potato "just add water" microwaveable cups because I didn't want to make a whole thing of mashed potatoes. It probably only needed 2 of the cups, but my ovenproof skillet is wider than I thought so 2 cups didn't cover the vegetable layer.
TIP #2: If you don't have an ovenproof skillet, you can just brown the meat in a pan, then transfer to an ovensafe dish. I planned to do that originally until I read the recipe again, but I don't see why that wouldn't work.
