Dinner Tonight: Medium Siracha Style Chicken Wings and Fried Cheesy Jalapenos Captain Donut put together and prepared the cheesy jalapenos for frying. Lightly melted Vermont sharp white cheddar wrapped around bits of jalapeno then breaded and fried in vegetable oil until a stunning golden brown. (Thanks Chef Donut!) The chicken soaked in a salted water bath for about 10 minutes. I then threw on a dry rub of Himalayan pink sea salt (one of my featured ingredients of the month), black pepper, Cajun seasoning, parsley, oregano, garlic powder, and onion powder. (I meant to do this step afer frying, but I think it worked out well anyway because it seems it permeated into the meat better and added rich, bold flavor.) After frying, I then let the wings simmer in some Medium Yuengling wing sauce (check your local grocer) for a few minutes with some spicy siracha. Then I fancy-plated all the lusciousness with a drizzle of ranch dressing (no shame, ranch is amazing) and some marinara sauce for the fried jalapenos.
