The pumpkin pie I made for Thanksgiving! This recipe comes courtesy of the man, the myth, the legend himself, Chef John from FoodWishes,com. This year will be my first time trying his pumpkin pie, but knowing Chef John, it'll be amazing. Chef John’s Pumpkin Pie 1 9-inch unbaked pie crust 1 15 oz. can pumpkin puree 1 whole egg 3 egg yolks 1 14 oz. can sweetened condensed milk 1/8 t. Chinese five-spice powder 1/4 t. freshly-grated nutmeg 1/2 t. salt 1/2 t. ginger 1 t. cinnamon Preheat the oven to 425 degrees F. Grease a pie dish. Roll out your crust and line the dish with it, cutting off the excess dough and crimping the edges. Set aside. In a bowl, whisk together the pumpkin, egg, and egg yolks until smooth. Add the sweetened condensed milk, Chinese five-spice powder, nutmeg, salt, ginger, and cinnamon. Whisk until thoroughly combined. Pour filling into prepared crust. Lightly tap on the counter to release air bubbles. Bake for 15 minutes. Reduce the heat to 350 degrees F. Bake until just set, 30-40 minutes more. The Quiche Lorraine I made for Easter brunch at Mom’s house. I used Chef John’s recipe and this will definitely be a keeper, but I think from now on, I’ll use a sharp white cheddar instead of Gruyère. The Gruyère along with everything else made it a bit rich for my taste, but the overall flavors and textures of the filling and buttery crust were incredible. Tonight's dinner, a recipe I've been meaning to try for a long time: Chicken Parmesan Casserole! Chicken Parmesan is one of my favorite Italian dishes, but let's face it, it can be labor-intensive to make. So this recipe combines all the flavors and textures of that dish while cutting the work to make it in half. And of course, it's courtesy of one of my favorite cooking YouTube channels: Food Wishes! The ingredients listed below are for the full recipe, but I cut them in half when making what you see in the picture. Thanks, Chef John! Chicken Parmesan Casserole 2 T. olive oil, plus more for the skillet 1 t. minced garlic 1/4 t. crushed red pepper flakes, or to taste Salt and pepper, to taste 6 boneless, skinless chicken breasts 2-2 1/2 cups marinara sauce 2 t. dried basil (or 1/4 cup fresh, chopped) 1 8 oz. package shredded Mozzarella 1/2 cup grated Parmesan cheese 1 5 oz. package garlic croutons Preheat the oven to 350 degrees F. Drizzle the olive oil in a 9X13 baking dish. Sprinkle over the garlic and red pepper flakes and set aside. Season the chicken breasts on both sides with salt and pepper. In a skillet over high heat in a little bit of olive oil, give the chicken breasts a quick sear (2-3 minutes per side), then set aside to cool. Deglaze the pan with a little splash of water or chicken broth and turn off the heat. Cut the chicken into bite-sized pieces, place it evenly in the baking dish, and pour over the deglazed contents of the pan. Spoon over the tomato sauce and spread it out as evenly as possible. Sprinkle over the dried or fresh basil. Sprinkle over half the Mozzarella and Parmesan cheeses. Layer the croutons over evenly, lightly pressing them into the sauce and cheese below. Sprinkle the remaining cheeses on top of the croutons. Bake for 35 minutes or until the top is bubbling and golden brown.
