Chicken Bog
I was filling a little homesick this week (especially with such fall weather and no fall colors) so I decided to make the ultimate comfort meal: Carolina Chicken Bog!
The chicken stock is made, the sausage is browning, and the veggies are all chopped and ready to go. Ultimate comfort meal is on the way to do all the comforting.

What is Chicken Bog?
Here are a few theories on the moniker's origins. It's termed bog by some because it's thick and gluey. Others argue that the chicken becomes suffocated by the rice. Others claim that the term stems from the dish's origins in South Carolina's swampy, bog-like low lands.
Chicken Bog recipe
Ingredients
1 tablespoon of olive oil 1 teaspoon of salt
1 medium onion 1 teaspoon of pepper
2 teaspoon of chopped garlic 8 ounces of smoked sausage
1.5 cups of white rice Chopped Parsley optional
4 cups of chicken broth Spicy sauce

In a medium-high oven, heat the oil. Cook, turning occasionally, until the onion and carrots begin to soften, about 4 minutes. Cook for 3 minutes, or until garlic, rice, salt, and pepper are fragrant and rice begins to toast.
Add in the 3 cups of broth, rice, salt, and pepper and mix in a pot. Close the pressure relief valve and lock the lid. Pressure-cook for 3 minutes on low pressure. Allow 10 minutes for natural pressure release before releasing any leftover pressure quickly. Tender rice is ideal.
Adjust for low heat on the saute setting. Add the chicken and the rest of the broth and stir to combine. Cook for about 5 minutes, or until the chicken is thoroughly heated. Parsley may be added if desired. spicy sauce on the side.

Making chicken bog at 10pm last night was the best decision ever. I couldn't enjoy it much last night, between indigestion and lava stomach, but just having it in the house now makes it 100% worth it.
Really chilly today, which is odd seeing as I live in the desert and it was just 98 out. Perfect weather for the perfect comfort food: Chicken Bog. Soooo easy to make, sooooo tasty and SO warm. Ate it with Sriracha of course! I didn't have sausage, so I used turkey dogs instead. Not sure if that's acceptable but it works!
ya can't win them all
Last night I made chicken bog in the slow cooker. I have tried 2 other times in the big castiron pot. Eachtime I've had to throw it out because half of the rice didn't cook. So I thought for sure if I did it in the crock pot, I'd be good to go. No.I was wrong. I think I know what I'm doing wrong, so I'm going to give it one more try. If it still isn't right, I will claim defeat and remove chicken bog from my recipe list forever. I'm tired of throwing away food. (there's no way to fix it and it's way inedible) I just hate claiming defeat. especially since I love chicken bog, but man this pisses me off. I made an apple cobbler for dessert, and following the theme of the night, the topping was under cooked. Thank goodness that was fixed by another 10 min in the oven, and was very yummy. I have food depression, but not like everyone else. I get so mad and sad and depressed if something I bake or cook doesn't turn out exactly how I want it. I'm not a whole lot of fun to be around when my food isn't right. Grrrrrf!
