Indian food is one if the most delicious cuisines out there. However, preparing Indian food would have to be one of the greatest challenges in the world of cooking. Not only do you have to know what you're doing whilst cooking Indian food, but it’s essential to have every Indian spice in your kitchen.
Chicken Boti, which is popular and available at almost every Indian Restaurant in South Africa, is one of the most delicious chicken dishes ever made. It is served with a type of bread called Roghni Naan, which has to be freshly made. It’s much easier to buy the bread from a Pakistani/Indian restaurant as preparing this requires a lot of experience.
How to prepare traditional Indian Chicken Boti:
Ingredients:
1 kg Chicken Fillet (cut into 16 pieces) 2 tablespoon lemon juice 1/4 cup yogurt 1 teaspoon garlic paste 1 teaspoon ginger paste 1 teaspoon cumin powder 1 teaspoon garam masala powder 1 teaspoon chili powder 1 teaspoon coriander powder 1 teaspoon chat masala 1 teaspoon salt 1 pinch turmeric powder Basting oil Lime slices for garnishing 1. Place the chicken pieces in a large bowl and rub the lemon juice. Cover and leave to marinate for about an hour. 2. Put yogurt in a small bowl. Add ginger, garlic, cumin, garam masala, chili powder, coriander, chat masala, salt and food coloring and mix well. 3. Marinate the chicken pieces in the yogurt mixture for at least 3 hours (preferably overnight) place in refrigerator 4. Thread the chicken pieces closely on metal skewers and grill the chicken over hot charcoal or oven bake. 5. Baking Instructions: preheat to 230 degrees; spread chicken pieces on a baking tray or shallow baking dish, cover with any leftover yogurt marinade; cover with foil and bake for 20 minutes; remove foil, apply a light touch of olive oil with a brush over the chicken, and broil on low heat for 10 minutes (or until golden brown) 6. Decorate with lemon wedges
