Ingredients: 1 lb chicken thighs, boneless and skinless. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz diced tomatoes. 1 cup chicken broth. 1 onion, diced. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon chili powder. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, saut until softened. Add chicken thighs and brown on both sides. Season chicken with cumin, paprika, chili powder, salt, and pepper. Pour in diced tomatoes, black beans, kidney beans, and chicken broth. Stir well, bring to a simmer, then reduce heat to low, cover, and let it cook for 20-25 minutes or until chicken is cooked through. Garnish with fresh cilantro before serving.
