Sorry guys, it's been a minute. Here's what we had for dinner tonight. I used a copycat recipe for Carrabba's Chicken Bryan but I added spinach to the sauce. Day99: Chicken Bryan Take 2. I assembled our leftovers a little differently this time, and stumbled on a revelation💡. First, my husband was gone and I don't grill, so I stuck the raw/marinated chicken tenders on a cookie sheet on the top shelf of the oven and broiled them for about 9min. But when it came to the pasta? 💡 How many thousands of times have I boiled dried noodles and worried about them sticking together? And sticky = death with angel hair. Then dear @inagarten reminded me angel hair only takes 3min to cook, so I decided to give it another go. This time, I noticed the instructions about salt. SALT! That was my revelation. I've always salted the water, but no one ever told me with a TABLESPOON of salt.😳 No wonder my hero @splendidtable had a segment confirming salted pasta water does not make the pasta salty! So this time I added the whole tablespoon of salt in the boiling water and the angel hair came out smooth as silk. I still rinsed it in cold water so it wouldn't continue cooking and get mushy. I also added a tsp EVOO out of habit. And then I folded the warm Bryan sauce (Day97) into the pasta, topped with goat cheese, and heated it all in the microwave for a couple minutes.
