Thought I'd check in and see how everyone is doing! Our routine hasn't changed too much. My husband has been working from home since December, and I homeschool my son so our days are pretty normal. My son is missing hanging out with his friends, and his extra curricular classes that he attends in the community and with our homeschool co-op.
We're trying to stay as lowcarb as possible, but honestly as long as we have any food I'm good! Hopefully this will all pass soon. Wishing the best for all of you!
My husband went out for a work lunch at a local restaurant and came back with this collard dip with pork rinds! The owners of the restaurant do keto and are working on incorporating more low carb options into their menu. By the way, it is amazingly delicious!!
I've been so slack about posting photos lately. Here are some favorites from the past week.
Smothered chicken and salad for dinner tonight. We're usually busy most weekends and don't do a lot of our own cooking. It's rare for us to cook a meal on a Sunday night, but we had a really lowkey weekend and my hubs made this delicious meal!
Can't go wrong with pork chops and asparagus!
So we had our Valentine's dinner tonight. I was planning to make ramen last night, but we had a lot going on yesterday and decided to order dinner in. I'm glad we waited, because it was worth it! I made the broth, marinated the eggs, and roasted a pork belly. Whew! We served it over Miracle Noodles and it was perfect!

Spaghetti and meatballs!! We found some shirataki noodles by Liviva that are comparable to Miracle Noodles. Since they're super low calorie we needed a big snack tonight. This avocado toast hit the spot!
Calzones made with fat head pizza crust, salmon and broccoli, and chicken fajitas were my favorite meals this week.
I bought avocado oil recently and I haven't really researched it's uses much. I used it in the fajita marinade because avocados and fajitas go together, right? 🤷♀️
I'm assuming I'd just use it like I would olive oil. I didn't notice a different taste with the marinade. Anyone have any special uses or recipes for using avocado oil?

I used more of the Great Low Carb Bread Co. elbows. It was sooo good!
Stir-fry with chicken, broccoli, peppers, and onions.
Best use of Great Low Carb Bread Co. pasta so far! We used the elbows and I let them soak a little longer in the water once they were finished boiling. The texture was much better. I added mayo, a dry ranch packet, bacon, tomatoes, and avocado. It was heavenly!
I still have a half a bag of elbows and I'm planning to use them in a soup tomorrow!
Salmon patties and mixed veggies. I made the salmon patties with Sola bread crumbs.
We gave the low carb noodles another try. We were thinking about one of our favorite meals from a local restaurant. They serve chicken alfredo mixed with buffalo sauce and it's amazing! We tried to replicate it and it turned out good, but not quite the same as theirs. My son likes to help in the kitchen, so I put him in charge of seasoning the chicken. Wow! It was fantastic!
I made zucchini chips in the air fryer as an appetizer. It was the first time I used it and the zucchini was good but I couldn't seem to get the right crispiness with them. I'll keep trying because we loved the flavor.
The noodles, on the other hand, are still not my favorite. The consistency is the worst part. The first few bites you think, "This is disgusting". Then you have a few more bites and it's not so bad.
I'm thinking about using the elbows in a soup and letting them simmer for a while to see if they soften up any more.
I used the Great Low Carb Bread Co. fettuccine tonight AND it was my first time searing scallops. It turned out to be a great meal!
We sauteed the spinach in garlic, butter, and lemon and tossed in the cooked noodles. They have a bit of a stiff consistency, but they seasoned well and we enjoyed them!
