Ingredients: 2 cups cooked chicken breast, shredded. 1/2 cup celery, finely chopped. 1/2 cup red onion, finely chopped. 1/2 cup red bell pepper, finely chopped. 1/2 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon lemon juice. Salt and pepper to taste. 4 large whole wheat tortillas. 2 cups fresh spinach leaves. 1 cup shredded cheddar cheese.
Instructions: Put the celery, red onion, red bell pepper, and shredded chicken in a large bowl. The mayonnaise, Dijon mustard, and lemon juice should all be mixed together well in a separate small bowl. Add pepper and salt to taste. To make sure everything is covered, pour the dressing over the chicken and vegetable mix and toss it around.
