3 cloves garlic, finely chopped
2 red birds eye chilies, chopped
1-2 stacks green onions, chopped
A hand full of cilantro leaves, chopped
1 tsp chicken bouillon powder ( adjust to taste )
1-2 tbsp lime juice (adjust to taste)
Bring a pot of water to a boil and cook the ramen noodles according to package instructions. Before draining, reserve about 1/3 cup of the cooking water. Drain noodles and set aside.
Heat 2 tablespoons of oil in a pan over medium heat. Add the chopped garlic, green onions, cilantro, and chilies. Sauté them for about 30 to 60 seconds until they become fragrant. Be careful not to let the garlic burn.
Lower the heat and add soy sauce, oyster sauce, chicken bouillon powder, and reserved noodle water.
Add the drained noodles to the pan. Toss everything together until the noodles are evenly coated and glossy.
Turn off the heat. Stir in lime juice, more green onions, and cilantro. Taste and adjust by adding more lime juice if needed, or a splash of water if it’s too salty.
