Ingredients: 200g pasta of choice. 2 ripe avocados. Juice of 2 limes. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Cook pasta according to package instructions. Drain and set aside to cool. In a blender or food processor, combine avocados, lime juice, minced garlic, olive oil, salt, and pepper. Blend until smooth and creamy. Toss the cooked and cooled pasta with the creamy avocado sauce until evenly coated. Chill the pasta in the refrigerator for at least 30 minutes before serving. Garnish with fresh cilantro before serving.
