Chimay Grande Réserve (Picked up at a Carrefour in Brussels). A 4 of 4. Somehow this hasn’t shown up here with a rating, but here it is. Smells of a ton of spices, particularly a wintery blend, and lots of caramel and toffee sweetness. Drinks much the same in the body with little carbonation, so a little cloying at times, but the alcohol helps cut through on the finish. A classic, and lots of dark fruit complexity in the body, particularly as this warms.

Cascadia Dark Ale (Spinnakers Brewpub)

Dark Ales rule. Seriously, they’re the perfect combination for anyone who loves the bracing punch of an IPA matched with the thick malty weight of a stout, and luckily I’ve once again found those desirable traits in Spinnakers’ Cascadia Dark Ale.

Bitter, malty, and fuh-fuh-foamy. I’m talking thick, robust foam for days and with a flavour and rich mahogany color similar to a Chimay Blue. Practically overflowing with resinous hops, there’s a quick burst of bitterness along with caramel and citrus notes that linger in the back of the throat, but also a surprisingly lighter mouthfeel than other dark ales.

Chimay Grande Reserve 9%

Aka Chimay Blue. If you have not had this you must live under a rock. One of the Trappist breweries. I used to idolize it for years, just because it came from a monastery. It has the template of the liquid bread bouquet. I like the Abbaye etched on the glass. Dark brown. Smells like bread, nuts, some banana. Medium body, medium carbonation. It has some bread flavor but the alcohol is very noticeable. Some bitterness that throws it off balance. I used to enjoy this a lot until I tasted a lot more Belgian beers. It broke my heart when I learned that the brewery doesn't use natural ingredients but mostly canned. Don't fall in love with beers just because they are made by monks.

Aargh, thanks to this great webshop, i can now drink my favourite Chimay anywhere in the world. Nice !!

Bières de Chimay S.A. "Grande Réserve" Belgian Strong Dark Ale: I've had this many times. You can pretty much throw a rock and hit a store that sells this stuff. Doesn't make it any less good, though. Dark fruitiness and caramely. Raisins, figs, and maltiness. Spice and Belgian candied sugars. Yep, can't go wrong with Chimay Blue.
