I didn’t know the difference until last year, well, at least, the difference in the US between cold noodles and dan Dan noodles is that the former uses a thinner noodle, and is in a spicy chili oil sauce with no meat; the latter is thicker noodles in a meat sauce with chili oil and also a key ingredient of a fermented type veggie commonly used in Sichuan, also, there’s usually roasted sesame sauce 芝麻酱 or peanut.
