Chocolate Orange Loaf Cake
reminds me of choc orange?
2025 christmas cookie// olive oil, orange, choc chunk buckwheat shortbread
every year I say I’m not going to bake cookies despite the annual urge to make elaborate cookie boxes because my health does not allow such things, and every year I allow myself one (1) cookie. (if the weather is cool enough)
this year’s cookie is based on DEB PERELMAN’s choc chunk & rosemary olive oil shortbread
ingredients
1 1/2 cup all-purpose flour (195 grams) [I ended up using 100g wheat, 195g buckwheat]
1/2 cup powdered sugar (60 grams) [+ about two Tablespoons]
2 tablespoon turbinado (raw) sugar (25 grams), plus 1 teaspoon (5 grams)
1/2 teaspoon fine sea salt
1/2 cup mild olive oil (120 ml) [+ about a 1/4 cup]
1 teaspoon finely minced fresh rosemary leaves
2 teaspoon roughly ground coffee beans
2 teaspoon roughly ground dried orange peel
dash ground cloves
dash dried lavender
1/2 cup semisweet chocolate, chopped into small chunks (85 grams) [I used about 100]
1 egg white, beaten until loose (optional)
directions
Step 1: Heat the oven to 325° F.
Step 2: In a large bowl, whisk together the flour, powdered sugar, 2 tablespoons turbinado sugar, and the salt. Add the olive oil and rosemary and stir to combine. Add the chocolate chunks and stir again. Gather the dough with your hands into one mass.
Step 3: Roll out the dough to an 8- to 9-inch roundish slab between two sheets of parchment paper. Remove the top sheet and use the bottom to slide the cookie round onto the back of a large baking sheet.
Step 4: If desired—it merely provides a little shine—brush the cookie with the egg white. Sprinkle with remaining 1 teaspoon turbinado sugar.
Step 5: Bake for 20 to 25 minutes. Slide the cookie round carefully onto a cutting board while the cookie is still totally hot. Cut with a sharp, thin knife into desired shape(s). Let cool completely, then separate.
Step 6: Do ahead: This dough keeps well in the freezer. Baked cookies keep for 2 weeks in an airtight tin at room temperature.
Note: For a milder flavor, replace half of the oil with a neutral/flavorless one. You can cut this into shapes with cookie cutters, too, but the chocolate provides a little resisitance.

I was in the mood for rye shortbread but forgot to buy some rye flour, so I went with buckwheat and wholemeal wheat flour (sifted). I also wanted them to be choc orange rather than choc rosemary, and my sister likes coffee deserts so I added some ground coffee beans and dried orange peel, and a tiny bit of cloves, dried lavender, and fresh rosemary
(probably a bit much but it’s christmas)
thanks to not doing my maths this left the dough with way too much filling and not enough everything else, so I added some more flour, sugar and oil, and hopefully that will be fine.
also I was pissed I had to use lindt 85% instead of whittaker’s, so I passive aggressively chopped about it
gonna let that rest in the fridge for the night and I’ll roll and bake them in the early hours of the morning tomorrow. I should really roll it now while it’s soft but…I’m tired and i’ll end up with it on the floor and my rolling pin in my eye somehow.
