These fluffy choc-chip pumpkin pancakes are the perfect way to start your day with a delightful blend of pumpkin and chocolate flavors. They are easy to make and guaranteed to satisfy your pancake cravings.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/2 cup pumpkin puree. 1 cup buttermilk. 1 large egg. 2 tablespoons melted butter. 1/2 cup chocolate chips. Cooking spray or extra butter for greasing the pan.
Instructions: Mix the sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves with a whisk in a large bowl. Add the pumpkin puree, buttermilk, egg, and melted butter to a different bowl and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. Mix the chocolate chips in slowly. Warm up a griddle or nonstick skillet over medium heat. Use cooking spray or extra butter to lightly coat the pan. For every pancake, put 1/4 cup of batter on the hot griddle. Once the top starts to bubble, flip it over and cook the other side until it's golden brown. Once the pancakes are done, take them off the griddle and keep them warm. Do it again with the rest of the batter, and if you need to, add more cooking spray or butter to the griddle. You can top the hot, fluffy chocolate-chip pumpkin pancakes with maple syrup, whipped cream, or more chocolate chips if you like. Enjoy your tasty breakfast or brunch!
