“Levain Cookie” part 2. I used Joshua Weissman’s Levain cookie recipe last time, but I wasn’t convinced that it was the best it could be for this type of cookie. No significant changes to the amount of the ingredients were made, however, I used cold butter (instead of melted butter), and instead of short time/high temp, I went with long time/low temp (350F for 22min or until internal temp of 175F, Stella Parks from seriouseeats). Baked on parchment than silpat to reduce spread.
