These homemade Nutter Butters are incredibly delicious and much better than store-bought ones. They feature a creamy peanut butter filling sandwiched between two tender peanut-shaped cookies, all dipped in rich chocolate.
Ingredients: 1 cup creamy peanut butter. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup unsalted butter, softened. 1/4 cup shortening. 1 cup semisweet chocolate chips.
Instructions: Preheat the oven to 350F 175C and line two baking sheets with parchment paper. In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheets. Use a fork to create a crisscross pattern on each cookie, flattening them slightly. Bake for 10-12 minutes or until the cookies are lightly golden around the edges. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring between each interval, until smooth and melted.
