This cauliflower bread doesn't have any gluten and tastes great instead of regular bread. Cauliflower rice, eggs, Parmesan cheese, and almond flour are used to make this tasty and healthy loaf that can be used on sandwiches or as a side dish.
Ingredients: 1 medium head cauliflower, cut into florets. 2 large eggs. 1/2 cup grated Parmesan cheese. 1 teaspoon dried oregano. 1/2 teaspoon garlic powder. Salt and pepper to taste. 1/4 cup almond flour. 1/4 cup chopped fresh parsley.
Instructions: Preheat the oven to 400F 200C. Line a baking sheet with parchment paper. Place the cauliflower florets in a food processor and pulse until finely chopped, resembling rice. Transfer the cauliflower to a microwave-safe bowl, cover with a damp paper towel, and microwave on high for 4-5 minutes until tender. Allow to cool slightly. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. In a large bowl, combine the squeezed cauliflower, eggs, Parmesan cheese, oregano, garlic powder, salt, pepper, almond flour, and parsley. Mix until well combined. Transfer the mixture onto the prepared baking sheet and shape into a rectangle, about 1/2 inch thick. Bake in the preheated oven for 25-30 minutes, or until golden brown and set. Allow the bread to cool slightly before slicing. Serve warm and enjoy!
